I am an avocado junky so any avocado recipe I see I have to try! I love grilled avocados, plain or with seasonings, but I had never had a baked avocado before so I had to try this. When my boyfriend first met me he did not like avocados but I have slowly got him to enjoy them almost as much as me. This is such an easy recipe to do and a great side to add to your lunch or dinner. Tonight he asked me to make the spicy chicken nuggets again and these went perfect with it! I also made a dippy sauce of sriracha hot sauce and ranch dressing. Start with a little bit of both and add what you need to taste. Below is the simple recipe for the fries - beware your hands get messy!

*If you are making with the spicy chicken nuggets, the nuggets will need to bake for 25 - 30 minutes. Put the avocado fries in when there is 15 minutes left. If they need more time you can put them back in the oven. I learned this the hard way!

- 1 Avocado
- 1/2 cup Panko Bread Crumbs
- 1 Tbs of Olive Oil
- Ground pepper (optional, I just ground it for about 5 turns)
Directions
- Preheat the over to 400 degrees
- Cut the avocado into slices - "fries"
- Put the bread crumbs and ground pepper in a bowl
- Place the avocado slices in a separate bowl and spread 1 tbs of olive oil over the slices
- Pick up each slice one by one and make sure it is covered completely in olive oil and dip it into the bread crumbs. You may have to push the bread crumbs into the avocado to get them to stick.
- Place them evenly spread out on a baking sheet
- Place in the over for 15 to 20 minutes. The bread crumbs will be golden brown when it is done.
